  1. To marinate the Tofu: In a bowl mix 1/2 tsp of kashmiri red chilli powder, or whatever chilli powder you have, and 1 tsp cornflour. Add your chopped tofu to the bowl. Let this rest for a couple of hours or for extra flavour overnight.

  2. Mix it properly so that a marinade of cornflour and chilli is created on tofu.

  3. Add the cooking oil to a pan and let it heat.

  4. Place the marinated tofu cubes into the oil and shallow fry it for 2 minutes on medium heat.

  5. Take out the fried tofu and place on a kitchen towel to absorb the excess oil.

  6. Add chopped garlic into the same pan (you can use the same oil used for frying the tofu) and fry it for a few seconds.

  7. Then add the chopped onions and fry it for 30 seconds on a high heat.

  8. Next add all the chopped peppers (green, yellow and red) and fry for another minute.

  9. Add 1 tsp kashmiri red chilli powder, green chilli, soy sauce and tomato ketchup into the pan and give it a good stir.

  10. In a separate bowl, mix 1 tsp cornflour with 4 tbsp of water. Stir it well, until there are no lumps and put it into the pan.

  11. Add fried tofu cubes and a little salt, cook it for a couple of minutes on a medium heat.

  12. Finally add the chopped spring onion, stir it well and turn off the heat.

Garnish with a bit of finely chopped spring onion. This marinated tofu recipe is particularly versatile and can be served hot as a starter or even as a main with rice. It is equally good in a wrap as a light, healthy lunch. I promise, this will be one of your go to recipes whenever you want to impress or just have some real comforting tasty food. Enjoy!
